Lots of things made the PS3 version freeze - it's the least stable version of Skyrim by a long shot. You shouldn't expect any stability issues relating to Hearthfire homes with the PC version, certainly not if you're running the unofficial patches.
I won't pretend to have any experience with Requiem's difficulty, so I'll just link you to the list of tips here:
https://www.reddit.com/r/skyrimrequiem/comments/33q7qq/which_level_should_i_be_for_bleak_falls_barrow/
Can't really say much to help though, unless you turned the difficult down to Novice, or got a mod that doesn't force a reload (I have SM_Essential Player, so I still fall for a bit, but don't reload, because that's annoying, can still take a bit to kill enemies, but the job gets done). Could also download other mods that may allow you to recruit others, or even custom followers (They can be somewhat easy to make on the CK too)
you have to play requiem different than vanilla skyrim, just charging into enemies is your death in 90% of the time
remember to use armor piercing (hammers, ebony and daedric metal) or silver weapons against undead, it's much easier
requiem is very clean in terms of bugs.. if you encountered bugs, it's mostly caused by other mods
edit: to the alchemy part: without a single point in alchemy, your potions are basically useless
but with alchemy.. oh boy :D
Yeah, I dont charge Into enemies anymore, I learned that the hard way :D As I said I did manage to do the dungeon after several tries. I lured them one by one into the traps. I also managed to get the horn of jurgen windcaller. I put a point in destruction and bought myself the cheapest fire spell. It works but it is still tough. I Thank god I had Lydia, Thornir ( who just would not go away) and Lucien the Spectral Assassin with me. I also spent On or two points in alchemie and I am able to hurt Draugr with the Crossbow and with silver bolts. I finally found a weapon with a fire enchantment and craftet a silver sword just in Case. I also have the Club ob Molag Bal now, which should be useful. I also spent a point in enchantment and I think I should enchant more of my stuff instead of using either the steel plate armor or a mix of thieves guild and brotherhood armor..
If I would use hammers now, I think I would suck because my two handed is lvl 5. Maybe I should go level up that aswell.
And yes you need to think carefully about what you do, and often you just have to accept you are not strong enough yet for a particular quest.
For instance, I have had no college of Winterhold service for ages as killing multiple dragon priests in Labarythian was just too much for my character. What was worse I had Brelyna as a Steward :(
If the extra challenge is too much just go back to vanilla.
The main problem with Requiem seems to be that to do some quests your character needs to be virtually a God, however, if they are that strong the rest of the game becomes trivial. Assuming of course you think that is a problem.
My Alchamy/Desctruction character got to Godhood quite quickly with little hussle. My B&S+HA and my Archer are finding it much tougher going.
I also think I got another bug or maybe I am just impatient, but I Killed the Wounded Dragon for Balgruuf and it seems that the Dragon encounters have not driggered, nor does the Dragonborn questline....
