Orc miner - travel around the orc settlements mining/selling ore.
Bosmer hunter - Choose an area, the Rift, Whiterun plains, the Reach, and gather hides and meat to sell.
Altmer evil mage - Build Winstead Manor as your evil base, mess up peoples lives by killing spouses of married couples.
Breton Conjurer - Only use conjured creatures for fighting.
Imperial Paladin - Only do 'good' questlines and only kill as a last resort. May only use steel armor/weapons.
Argonian pearl diver - scour the bottom of lakes and sea for items to sell.
Well sure, the ideas listed above are only fun for the first 20 levels or so. Then start again as something else.
