Does anyone know if/when a Catalina-compatible version will be released? I've played the online text-only version and would love to experience the Illustrated Edition.

I don't know if/when there will be a release, but the game is under the hood just chrome with a webpage and the anchorhead .gblorb file.
You just have to make use of a glulxe interpreter for mac, and open that file...I think(not guaranteed) this should work. This worked for me under windows with 'Windows Glulxe'.

What just came to my mind, is that you won't be able to download the game on Mac, right? So might be not the best idea.
