Princess Maker is somewhat unique. Cute Knight and Cute Knight Kingdom were actually based off Princess Maker. In fact, Princess Maker defined the raising simulator genre.
Have you tried Prince Maker: Braveness? It's a Princess Maker fan game where you raise a boy instead of a girl. You might need a virtual machine to run it because I don't think it works on Windows 10.
There are other games like Princess Maker, but most are in Japanese and there are some in Chinese as well. Most are untranslated.
It's difficult to be a fan of raising sims because it's such a niche market!

Both are very similar to the Princess Maker series.
There's also the Tokimeki Memorial series which has peaceful life sim type of stuff with stat-raising but those entries can be hard to get/play in English.
My biggest recommendation though is a strange sort of roguelike-meets-stat raising RPG called Trillion : God of Destruction. I usually don't like Idea Factory games but got very addicted to that one. Lots of emphasis on stat-raising and thinking very carefully about what stats to work on while time passes in-game and day by day, turn by turn like Princess Maker. There are different endings depending on how smart your decisions were. (It has mild fanservice though, unlike the more wholesome titles mentioned in this thread.)
Prince Maker Braveness is based off a Chinese game, only you raise a boy instead of a girl. I think the person who translated it took it down, so it might be hard to find.
For the two games mentioned above since I played them: Chinese Parents is fun, but it gets boring really quick unless you want to go for all the traits. After 2-3 runs, it gets pretty samey, and it's annoying if you're raising a son, because dating the girls compared to having a daughter dating the boys is a real pain in the rear. Maybe represents real life too much? :P
Ciel is probably closer to what you want, but I think it's a bit flawed, and it drags even worse than PM5 for length. The story and lore is really good though.
There was a game I found on my android phone called 'Memories Remember Me' that has gameplay exactly like PM2, but it's a phone game, so it's full of micro-transactions. I could play it fine with the free stuff and get an ending. There were other stat raising games on mobile, but I think some of them shut down. There was one where you raise a boy or a girl and had something to do with demons and angels, but can't remember the name.
Like someone said, stat raising sims are really a niche series, so finding one, let alone one in English, is really hard. :/
I also found this, but I did not really enjoy it. Maybe you like it more. Or try it and make use of the return policy, if you don't like it.
It's also about raising a young royal, but I think it is more complex and a bit of a visual novel. You know all the diplomacy and history of a kingdom... Oh and it is considered rather hard and you die easily.
Those were the games I'm thinking of, but for some reason, it was called 'Love Story: Legendary Twins' and 'Love story: Magical Princess'. Upon looking, there are TWO versions of the same game, one by Chen Leu, and the other by Catcap studio. I think I played the one by Catcap, but really, there's TWO versions of the same exact games. How is this even allowed on the app store, who knows. This is on google play, but my phone is no longer compatible with it (I have an older phone). Exorcist is not on by catcap on google save the chinese version, but both games are on apple.
And both have micro transactions (I think you had to pay money to play the boy in it), so beware of that.
I really don't know why there are two versions of this game, and I don't know which one is better, the catcap version had sloppy English at times and a bit buggy, but was playable and it was fun, but beware of the micro transactions.
This game is quite unique, as there you loose a weight and bulid different stats, so its very similar to Tokimeki Memorial. However, loosing weight concept combined with dating and raising sim, gives you a very unique gameplay. In addition, the plot is actually quite well written and there are some interesting twists depending on which guy you are dating.
I HIGHLY recommend Chinese Parents. there is even a joke deep in one of the side quest implying that the game is basically a rip off of princess maker. also, the inheritance system greatly increases replay value, i'm 20 generations deep in my main family line. 10/10 it's princess maker 2 but without any of the pervy stuff.
If you don't have the right stats allocated its game over, so its borderline Sierra Logic.
Life sim games are more of a Japanese Chinese game genre, but here's some that I've played that are out in English. There's so many more Japanese and Chinese ones that I love but dunno if you speak those languages.
Similar stat-raising life sims would be:
1. Lair Land Story is very Princess Maker like (not as much RPG element but everything else very similar)
2. I was a Teenage Exocolonist just came out recently and is also very fun.
One that I think is also very heavily stat based but not exactly a stat-raising sim game:
Persona - more of a JRPG but I mean there's a lot of stat and social management in this game so I think it counts...
Below are JP or CN games (maybe there's an English patch somewhere for these??):
1. Tokimeki Memorial (Girl and Boy side 1-4). - classic stat-raising dating sim. The first boy side one is the iconic game that started the whole dating sim genre.
2. La Corda d'Oro 1-4 - otome game sim about classical music
3. Love Revo - otome game about weight loss
4. Stardom series - about managing an idol firm and raising future stars of the entertainment industry.
etc...etc...
Anyways those are ones that I can think of on the top of my head. But honestly ones that have garnered enough attention to have official English releases are rare.
If you want to raise a monster instead of a daughter, Monster Rancher 2 is a really good game, and it's on Steam now!
If you want to raise a party of warriors, Various Daylife is OK. It's a little different in that there's no time limit and you basically just grind until you get what you want, though. But it's fun to try to do really well in a short time.
