Similarly, what works for what dino has a lot to do with how you want to play. You can make a fine combat build out of most dinosaurs provided you're playing in a style that compliments it, e.g. ambushing people. On the other hand, it can be more fun sometimes to make a speed build and try your luck as a bit of a nomad.
But, just to get you started, speed megalosaursus and a combat tyrannosaurus are both popular builds that can be very dangerous. And don't feel like you have to only do one tree at a time.
Otherwise, I agree with Huky re: survival. That's a later stage tree for the most part. Early on you need to be worried about what you're going to do when you encounter someone who has maxed out combat or speed. Your food/water meters being relatively full won't prove decisive in such a fight. That said, critters like rexes might benefit from a little survival earlier than other species as they need a lot of food to survive.
