I never had problems with them in FM 2012. This game actually pretty good for tactics. You can change each player insturctions to make them what you want. Like you can make an AMR position to play like MC with giving them right instructions. So its basicly up to you. Just tweak their insturcions and try to find best for them.
Also if you give them much more freedom, creativity they will do what they want and ignore your instructions. This can be good for Attacking but usually very bad for Defending. So i suggest you to run more diciplined tactics.

Btw, do you use "tight marking"? I know what it means irl but I just cant figure it out in FM12 (or 13)
How do you get your lazy primadonna wingers to track back and defend... the problem is that they usually have awful stats for it. My Ronaldo level left inside forward/winger has positioning, marking & tackling of 2, 2 & 3.
Ultimately though your wingers are the least important parts of your defence. Your defence should never rest on the shoulders of the winger.
If you're having problems defending, think about your formation, mentality & closing down.
My go-to defensive formation is a 4231 (two defensive midfielders, 3 man midfield and a lone striker).
Team setup:
Philosphy - Rigid
Strategy - Control (although maybe go counter if you are inferior)
Passing Style - More Direct. If you sit deep & defend your attack should be based around quick movement of the ball up to the wingers, attacking mid & striker.
Closing Down; Default. It's better to just leave that here rather than tell the team to sit back, or to push too high at opponents. I set specific over-rides though as well.
Tackling: Aggressive. I accept that I will get a few red cards, in exchange my players crunch the opposition when they decide to tackle. That said, you probably don't want your defensive 4 to be anything than default, because if they throw into tackles they'll miss. You want them to stand up & be ready to block/intercept passes & shots and just get their bodies between the opposition player and the goal. I use over-rides where required.
Roaming: Stick to Position. You will over-ride the few players that need this with individual insttructions.
Specifics instructions:
Defensive Line: Very deep. About 15% of the total.
Tempo: Quick. Again, if you're defending deep you want to counter quickly.
Counter - Yes
Offside - No. I never ever use the offside trap. It just doesn't work.
I use my central attacking midfielder as the playmaker, and set the target man to my striker. My strikers are always quick & fast, so they get "Run Onto Ball" ticked.
Cross Aim: Always Near Post.
GK: Sweeper Keeper - Defend.
Overides: Mentality ticked up to the highest, little creative freedom, closing down to own half, tackling easy, distribution set to defender collect to a fullback, passing style the shortest it can be. This will let the keeper run out of the box to sweep up, while keeping him from making pointless long balls.
DR&DL - Full Back - Support.
Overides - Tackling set to Easy, passing style Shortish-Mixed, Cross Often. Wide Play - Hug Touchline
CBs - both set to Central Defender
But one is set to Cover. The other to Stopper. The only overrides I do are to making their passing short (I don't want them smashing long balls, but I want them to pass it quickly to the DMs & fullbacks), and both have Tackling - Easy.
Defensive Midfield.
I use one Anchorman - Defend. Only overrides are closing down own half, and tackling normal.
The other is a deep lying playmaker - Support. Overrides are Closing down Whole Pitch, Tackling Normal and unticked Hold Up Ball.
Attacking Mid
I use one Attacking Midfield Playmaker - Attack. Overrides whole pitch closing down, hard tackling.
Wingers
Both left & right set to Winger-Attack. They both close down whole pitch with hard tackling. I use my left winger as a right footed retrained striker so he gets the "cut Inside" wide play option, while the right winger is more of a typical winger, so he's basically default set to hug touchline.
Striker:
Deeplying Forward Attack, with closing down whole pitch & hard tackling.
The goal with this tactic is to compress the pitch when you're defending, for your 4 attacking players to rush around the pitch non-stop to close down the opposition, while your defensive 6 concentrate on marking up, blocking shots & being in position.
Once ball is regained, the intention is for the defenders to quickly get the ball to the wingers, attacking midfielder, and they work to put chances in on goal along with the striker.
If you really really want the striker to track back, set him to man mark the opposition winger. Very few teams have fullbacks that can setup goals even if they get the ball alone 35 yards out on the wing.

I may use more man-marking if the opposition has a particular formation where it might help. One example, I might set a lone striker to man mark an opposition lone defensive midfielder.
Central defenders get tight marking because if they are in the process of marking a player it's going to be right in the middle of the penalty area and you don't want the opposition player getting space.
Everyone else, won't get tight marking because either they can't mark (ie, strikers/wingers) and will just get dribbled around, or their job is to prevent the attacker getting past (central midfielders & fullbacks).
