Arcade is a more narrow and linear map with lots of choke points but still has a few spread out areas like downtown, a plaza ect. However most of the time you'll be going back and forth a long the same roads if you're picking up random customers.
Original has a more grid like set up where stops are closer together but can be confusing to navigate and sometimes the arrow won't help you. Map knowledge can give you some real crazy shortcuts on this map.
Overall I'd Arcade is easy to learn, hard to master, Original is hard to learn but easy (well easier) to master. This makes sense considering an Arcade machine is pay per play, whereas a console you pay for infinite attempts.
Red Circles are Shorter Trips, Green Circles are Longer Trips with Orange, Yellow and Yellow-Green being the medium length trips. In addition to that a smaller circle (You can't park as far from the customer) means a longer journey. So a small green circle is a long trip and a big red circle will be a short trip.

Yes, they never renewed the licenses for "The Offspring" and "Bad Religion" songs to feature in this. Probably because they were more expensive now. You can mod the old songs back in.
