You must unlock free ride for the trail first by completing all the challanges on it, then complete the free ride, and after that, you can switch to night mode in the mountain selection.

If you already unlocked a night ride and you're not clear how to switch from day to night (took me a minute to notice), the Time Of Day toggle appears in the upper right when selecting the mountain. Just press RT or LT (or your equivalent key binding) after you select the trail.
