what happens after finish last mission?

After complete last mission of the history, will I still be able to play in the same profile?

Im few missions away from finishing the story, but I've already burgled almost all the houses (except server room on 303 & some stuff at 304) & I want play Halloween & christmas events in future in this same profile, don't want to start alll over again...
So if I send the gift to the Lombardis, what's next? Profile is deleted? Do I have to start over? Can I access my original hideout or stuff? Thanks.

It's not deleted, it saves before you send the gift and there's not a chance to save afterward so you can just go about your game, it will still have the goal of sending the gift, but you've already completed the story mode. It will also give you the option to start a new game + which will give you access to the stealth ball that makes you go completely invisible.. except in cars.
