How to unlock new character

You will find new adventures just by doing the story. Complete dungeons and you will see them around, go to the pub at night, chapel, towns square, etc when you go out.

Eventually they will introduce themslfs and give you the adventurers card so you can hire them.

oh thanks u so much and one more question why the map only have castle and jade way,even i finished the jade way boss rounds ,there s still no other new map,do u konw why.

As the adventurers, they will unlock when you advance on the story and visit the places of the city. I've unlocked the third dungeon recently just by visiting places and talking to people.

Well, you have to follow the story to meet the characters and unlock them for adventuring, also, you will have to increase their reputation (selling three or four items to them in the first loop):

Louie: You start with him.
Charme: Clear the Jade Way, then make her go to your shop (put on your store some items like Thief's Knife and the book Booze of the World). The second time (or third) she will give you her business card.
Caillou: After you can do advanced orders (Merchant Level 7), he will place one order for three items (Bat Wing, Charred Lizard, Slime Liver). Go get them (you can get all the items in a few runs on Jade Way or in the Boss Rush), and every third day he will come asking for them. After you have completed this request and sold him some items, he will give you his card.
Elan: Clear the Jade Way, then you must go at Evening/Night to the Pub to see an event with Charme. The next day, go to the Merchant's Guild on a morning and you will see another event. Next, you must keep your shop's atmosphere Plain and Light to make sure he visits your shop (You can put Candy on the counters). Finally, he will give you his card after two or three items sold to him.
Nagi: After the 9th Day, go to any dungeon to find her (she can't appear on a Boss Rush) and start a cutscene. you must do this FOUR times. Then keep selling this to her.
Tielle: After clearing the Jade Way, you must go to the Town Square in the Mid-day (if you have more than 100000 pix, maybe you will trigger another event first (Euria's), so if this happens, go back the next day). After this cutscene, go back to the shop and a drunken Charme (make sure you have the atmosphere required for her to visit) will tell you about a new dungeon: The Amber Garden. Clear this dungeon (Tielle will be the Final Boss on 30th floor) and after she recovers, put Candy and Bows on your shop to make sure that Tielle returns as a customer.
Griff: Clear the Amber Garden first, then you will see a cutscene of Tear in the Midnight, then you will have to go to the Town Square at night two times. On the third Evening/Night (and if your shop Atmosphere is Dark), Griff will issue a warning and the next day, Louie will announce the discovery of a new Dungeon: The Obsidian Tower. Clear the dungeon (50 floors, you will fight Griff in the 30th and in the 50th, he will be the Final Boss, with an extra hand...), and then he will appear on the shop at Evening or Night if the atmosphere is dark enough.

Watch for town locations to flash -- don't just visit them whenever.

Most of the dungeons will unlock and adventurers will show up in your shop eventually if you hit story encounters in town and finish the latest available dungeon at least once. Once they show up in your shop, sell them a few items to increase their rep, and after a bit they'll give you their card.

Nagi and Elan are the only tricky ones with unusual conditions. Nagi gets lost in dungeons a lot, and you have to randomly find her wandering around several times before she ends up in your shop (by accident, natch). Elan is dirt poor, so he'll only show up the first time if you have cheap stuff in the window (he has a soft spot for candy though).
