Dead Lands also has new mechanics.
I haven't played Norse Lands, so I can't say for sure but I believe there are also a few new mechanics.
Now as for the Dead Lands and Norse DLCs. They're kinda the same too. Obvious differences are the themes in which they portray, but basically Dead Lands introduced some new features like interchangeable characters each with their own unique abilities where as Norse Lands swaps that for interchangeable weapons that you have to earn through puzzles. Norse Lands also adds some cool unique buildings and adds shields to all the little people which helps them survive longer. This DLC also introduced the vagrant hostels. It was from that point on that even in non-Norse Lands runs you could chop down the Vagrant camps and turn them into hostels/brothels to recruit citizens from.
Each has their own unique twists and adds some fun. I personally love the Norse Lands and basic better. Ninja are useful and fun too, but I don't ever use the Pikemen or ninja anyways.

edit: each one, obviously, adds a new skin as well. by 'new', i mean new features/powers/challenges/etc. norselands soundtracks is pretty cool, too
Kingdom Classic: Medieval European setting. You get knights, who are super tanky and have a high chance of blocking greed attacks with their shields, and spearmen who gather fish from the river in all seasons and poke greed who get too close to the wall until the spear breaks from poking too many greed.
Kingdom Shogun: Medieval Japanese setting. Forests are replaced with bamboo forests which are MUCH thicker, meaning it will take about twice as long to clear out forests, but you'll also make twice as much money from it since there's tons of bamboo crammed in there. You also get samurai, who have a higher chance of counter attacking greed but aren't as tough as knights, and ninjas who gather fish from the river and hide in the forest to ambush greed as they pass by. They also lose their gear after killing a certain number of greed like the spearmen. Some of the mounts are also unique to this setting.
Kingdom Deadlands: Similar to Kingdom Classic but with a gothic vibe. Your monarch is replaced by a character who can use special abilities in addition to the mount's abilities. For example, your starting character can attack and freeze greed. This mode also has a lot of unique mounts in it with new abilities.
Kingdom Norselands: Medieval Norse setting. Much weaker walls, but builders double as melee units which can get shields to defend themselves from several hits from the greed while counterattacking. They can also form shield walls if need be. The norse can also use berserkers, who will aggressively charge into the greed to deal some damage to them, and artifacts from the gods which give the monarch abilities like Deadlands. I've spent the least time with the Norse, so I might have missed something.
Deathland has Heros you must unlock with there own powers, also total different mounts.
Northland has 6 Island, comeing with that a total different Island getup. also no catapults (berzerkers replace them, and boy they work total different) . to compensate for teh lack of fire the ballista hermit is excahnged by the fire tower hermit. also you have no "winterfisher" (spearman or ninja) so your winter income depends on beerybushs. for this missing out fighter class you get the shield shop. with that your workers get taffer adn can form shieldwalls when they have a shield. backside is your squires can only take bowman with a shield as entourage, what means no shieldshop = no squire archers. also you can unlock special powers usable by your king and again get some unique functioning mounts.
last but not least you get a new enemy type (and must in exchange only deal with the flyer types when you attack a small portal after a very long reign)
