bakery/brewery is best made at one of the 2 main hall towers, so they have the same way from both sides and you have enove time to react.
Well that's a weird take on the bakery but sure, if you want to use it like that. Honestly though why? You need to go to each side anyways to clear the next patch of wood and in the process you go to the next few vagrant camps. Even if they are far it just means you gotta pay one more coin per citizen after they get caught on the next day cycle but then they are probably already halfway to your base. That's only assuming you didn't start early enough getting to the camp before the next wave hits. Compared to New Lands the citizen run much faster once they get the coin so it's not that much of an issue.
Considering that the bakery, especially since it replaces a tower which would leave you more vulnerable to the point of potentially breaking a run during a particularly nasty wave, seems to be more of a convenience to use for when you are good on cash but not good on manpower which is often the case once your farming machine starts running smoothly and waves start hurting more. Especially since there is a limit to how many places you can be regularly at any given time even with the fastest mount.
Do you want to refill a bakery 10-20 times on one island or would you rather just make 10 bakeries and fill all up once and then not have to care about recruiting at all?
Not really useless.
when you stop playing easy and do hard and above you will recognice that idleing around on an isle (and that is the case when you use so many time to upgrade so many towers to a bakery) and wasting so much money isnt the way to survive.
