You can also brute force it a bit. You'll eventually deal enough damage to the portals to bring them down despite the heavy losses if you attack, damage the portal a little, get pushed back, beat the counter attack at the walls and repeat. This is also why it's important to build your walls close to portals if you can't use the ships yet.
It's my first Call of Olympus run, too. I did it differently. After the first, "Oracle" island, I took care of a small island, and then went straight to the big island that was unlocked. After that, I did a small island again, and once more I invaded its associated big island.
It's not a spoiler to say that each small island is a stepping stone to its larger one. After all, the ghost says words to that effect sometimes. I can tell you this: while doing what I just described, I got stone relatively early on (can't remember which island), and later, the iron/rock upgrade as well. You also get powers from the big islands (not much of a spoiler honestly). Not to mention advanced mounts. The big creature and the crab you mentioned? Yeah, I'm pretty sure I wouldn't have been able to beat them without my upgrades. It sounds rough, my man.

Also, while the chimera is awesome, it turns out the island contents are randomised. All I can usefully say in that regard is that my preferred order is SW -> NW -> SE -> NE. This is because Hephaestus has the simplest quest, and the reward is very good. Artemis has a terrible reward but the next easiest quest (once you figure out the puzzle). Athena has harsh conditions, so she's best left until you have more units to carry over. Hermes isn't bad, but you can't complete his quest until you've visited every other island.
rule of tumb: first Big Isle has stone, so dont idle around on all the small ones first.
There is a WINTER island, and doing that late game is going to, probably, end your run. I suggest you do that as the first Island, when the waves are still small, because late game in winter, with bad RNG, its game over as the winter lasts until you free an NPC. On hard we got 5 Brutes, 3 Crabs, and probably 50+ small greeds with masks, we tend to spend alot of time on each island, but this was also on Hard.
We did it last before the final island, we barely made it trhough it, bad berry bushes placement, only 1 vagrant camp until we scraped togheter enough coin for the vagrant bait building, and its expensive.
The winter island is the SE one btw

Mounts wise, I quite like the Bear for eeking out money fast.
I keep getting decimated. I'm on my 2nd heir.
On my first run I had several boats. But I've tried to hurry through so only have 2 now. Should I be going to the other islands trying to actually finish all portals? And re-get the boats?
I swear I didn't have so much issues on the original game. :)
