There's two "levels" to the game: The world and the 5 lands in it.
Days. There is a global day number for the world. Enemies get harder the higher the day number.
If you get defeated on any land beyond 1, several pros and cons happen:
Cons:
-You lose all progress on that land and are transported back to land 1.
-Over time, any lands you are currently not in decay. This is worse than it sounds however. It simply means workers will gradually lose tools and walls will gradually disappear.
Pros:
+Day counter is subracted by 100. So if you were on any day below 100, it will be back to 0.
+All lands before the one you lost REMAIN INTACT.
+Anything unlocked with gems remains unlocked. All other structures than the ones listed above (your castle, towers, etc) remain INTACT.
+Any enemy portals you destroyed remain destroyed.
+Any hermits or mounts you lost in the land you were defeated at can be reacquired at their huts.
+Even though walls disappear when you are away, you do not need to upgrade them again just rebuild them.
+All villagers will remain intact. Some will need to fresh tools/weapons tho.
+Any technology you have unlocked will remain unlocked.
So even though you lose some progress on the land you lost, it will actually be much easier now to completely clear out the Greed from any previous lands because you will have all tech and mounts you unlocked plus most of structures you built the first time will still be in those lands. You actually cannot fully defeat all the Greed until you get the Iron tech on land 4.
Advancing back to the land you lost should be pretty quick and the next time around you will be stronger and better able to prevail.
In my first playthrough still. I was defeated on land 4 and since then I have destroyed all Greed on lands 1 - 3 and am now heading back to land 4 but this time on a much lower day so more time to spare. I am hoping to at least reach land 5 so if I lose again I can destroy all the Greed on land 4 on the way back to 5.
Again this info is not 100% accurate but just from the wiki and the time I've had in the game this is what my basic understanding of it is.
for example, i played a game where i destroyed every portal on both sides and the wave strength by island 5 was crazy
i also played a game where i only broke the cave side portals and even with a higher total day count, the waves were easier to deal with
so each time you break a portal, the greed get a power boost
(so destroying as few portals as you possible makes the game easier to win)

I finished by day 150 I think, cleared 3 islands as well (Island 1,2 and 5). 3 reigns.
This indicates that if you want a more challenging experience you should avoid dying. Not sure what to make of that!
I think that difficulties options at game start would be a good idea. Easy mode would offer even slower greed power creep whereas hard and 'nightmare' difficulty would enable much faster greed power creep over time and no 100 day reset if you are killed.
Also advanced options / xcom style 'second wave' settings would add replayability to the game.
And yeah it's an interesting mechanic, the dying thing. What I love most though is how you cannot lose all your progress. I really cannot play games that have the potential to lose everything(ie. a long game of Civilization that ends with you losing, lol)
Also, what's the end goal/victory condition? Clearing the Greed from Island 5?
Considering the defensive options, with enough archers, a ballista tower, and optionally a flame catapult. Your defenses could hold out against any amount of greed, regardless of how many there are. If you decide to move outside of the walls with a salamander and set the wave on fire as they are approaching your walls you can completely trivialize every single attack wave.
If your playing on co-op. You could intentionally lose your crown on your salamander monarch and basically camp the portal to burn every greed coming out of the spawn, since you only lose when both monarchs lose their crowns, co-op allow you to trivialize any attack wave with a salamander.
Even without cheesing it like that, there's no limit to the amount of archers you can recruit, and you won't always be losing troops on attacks, with enough archers against the wall with the archer statue active, your archer's will shoot literal laser beams worth of arrows that will effectively one shot every threat that reaches the walls.
Given the limited number of options that the greed can attack you with, you can eventually reach a critical mass where the greed can never harm you.
This is very easy to achieve if you have the baker, as you can just keep catching new recruits as they go for bread, and make sure the bow shop is always stocked with bows.
