Usually people play co-op for the great benefit they have of managing only one side of the kingdom. But they certainly do have to perform a couple of actions together, like, for example, going inside the cave, and jumping on board for the next island. I can see how these two moments can be painful... During which of them did you rage quit? Going for the cave, or just before jumping aboard?
if i had to pick one mount, it would be the stag (unless you count sleipnir, which is just broken), although griffin is a solid second choice.
as for your request, i think it would make the game substantially easier, and the balance is already leaning that way
