This is correct. Just a slight "well actually" addendum, though - Two Crowns used to have the same leaping attack. This was changed to the current passive buff in the Never Alone update earlier this year.
Regardless, what you said is true. Two Crowns knights are not suicidal. That honour went to Berserkers.
Berserkers are the Northlanders' "disposable" unit, a sort of combination pikeman/fire barrel. So yes, it does make sense for them.
(Speaking of; Pikemen picking up their dang coins when? Ninjas too if they don't! That annoys me beyond belief)
VERY. 1 coin (if not more for the Vagrant), 3 coins for the Worker, 6 coins for the Berserker and then another 10 coins if you want to upgrade them. And they really don't last long in later waves - even the upgraded ones. What I personally found disappointing with Berserkers is they're a little better than Fire Barrels but they're a LOT more complicated and expensive to make. Doesn't strike me as a good trade-off.
You can't - there's no Armoury in Norse Lands. What would be the Armoury Hermit in other campaigns is a Berserker Hermit in this one. His tower allows you to buy a stronger potion which upgrades a double-axe Berserker into a greataxe Berserker. Seems like the latter has a higher block chance. There's no option to recruit additional Squires.
Incidentally, the swords aren't for recruiting additional Knights. They're for upgrading existing Squires.
