Based on how they act, I would guess that Monika and Yuri are third years (17-18?), Sayori would be a second year (16-17?) and Natsuki would be a first year (15-16?)

Only because it's considered creepy in Western countries to attempt to date children even though it's still a video game. So they get artificially inflated to adult status, and everything is ok.

I said Western countries since games in Japan seems to have no problems with having female characters that are 15 or 16 do things. We hear about this all the time that a character in a game gets up-aged for North America localization to make them "adult".
