Why didn't Natsuki got a death scene?

Even Monika got one.
Natsuki is the only character killed Off-screen. We don't get any breakdown or horror sequence.
It dosen't help that we also never got a deep look in her problems like Sayori or Yuri.
Why is Natsuki so underused :(

Well to be fair, she didn't really have any problems like the other girls. Her issue was her abusive father. (Hence the whole malnourishment issue and whatnot.)

She sort of gets a death scene, actually. But all that happens is she snaps her neck and runs at you after getting mad at you for not spending time with her. And to be fair, that was just Monika messing with her code. Rather than amplifying anything like with the other girls.

In the end, no one cared about her. She got outed and deleted like it's nothing. My vision is that she could never form a real connection with the MC so that's why Monika didn't bother to mess her up that much, and naturally Yuri got more dominant and obsessed than the other characters, so there was no point in further dealing with anyone else.

It's kinda this actually. Being a tsundere, her route would focus on the tsundere trope of being from cold and hostile to kind and sweetheart. However the player never got to that point, so...

also, best girl Natsuki can't die

Technically she’s the only girl that didn’t die, she just got deleted.

Natsuki definitely got way more aggressive in the second run of the game, which I believe was Monika's way of making her more unlikeable, but in the end it didn't matter because of Yuri being so obsessive that you couldn't spend time with natsuki anyway

Natsuki is my favourite girl and I wish we could have spent more time with her to get to know her more

Due to the fact that Yuri IS the Monster of the Story and Monika seems to be the Hero, it makes sense that it focussed much more on that.

actually, I thought about that first. but its not true. the MC had no chance in the scenario whatsoever. the only thing he could have done was walk away from everyone and maybe, just maybe, this would have made a change.
