Sayori is ESFP through and through, and most people who think of her as ExFJ don't seem to get that bottling your feelings and hiding them while putting everyone else before you can ABSOLUTELY be Fi. Every high Fi user I know has done this at some point. And people who call her ENFP....no... I promise we ENFPs think very differently from ESFPs, but our stereotypes are so close and inaccurate that it's confusing. But this girl is an Se dom for SURE.

Natsuki... I... probably the last thing I'd ever type her as would be ISFJ... I'm interested to hear your logic though! Cause baking and realism can occur in any type. Her poems are straight to the point and simple, yes, but every last one of them is written to perfectly highlight a hidden truth in the world. Monika even compared her to Shel Silverstein (an ENFP), and I totally agree! Her poems SCREAM Ne. My instincts were always INTP, and to me it makes sense. Underdeveloped Ti (because she's a high schooler and functions develop weirdly) would manifest in her stubbornness and poise. Her whole attitude is very in-the-moment, not calculating or processing, but witty and quick-on-her-feet thinking, which indicates high Se or Ne (aka NOT a J). So for now I'll say INTP, but I could be swayed.
Just Monikammmmmm I definitely see where you're coming from, but ENxJ seems to be the general consensus, and I gotta agree. I always thought ENFJ, but then again, there's the ends-justify-the-means mentality and efficiency without regard to the effects on others, which could be indicative of Te in ENTJ. Personally, though, I think that's mostly because she knows the others aren't real, and even then she saves their files. I think she was just blinded by the idea of a real world and a real person. I'm gonna stick with ENFJ.
Anyway these are my thoughts for now, but my Ne definitely won't let me stop considering other possibilities. Such is life. Hope we can discuss!

While I have not had the chance to think about how I might re-classify the ladies yet, like to get your view on the inferior function. i.e. if I understand correctly, under stress, an ENTP would revert to the inferior ISFJ, an ISFP would revert to the inferior ENTJ, so on and so forth.
In this game, are we seeing more of the inferior function than the 'default' function (with the exception of Monika)? For example the ladies are 'infatuated' with the main character, and there is a possibility that we are seeing their inferior functions as they are under stress. Therefore this adds to the complication of typing them, unfortunately.
Having said that I believe more familiarity with MBTI theory would allow seeing past the inferior function to discern the actual type.

i can't help it but Yuri is giving me a huge big fat INFP vibes... you know with all of her struggles with social interactions, excessive self-loathing, having low self-esteem, neglecting genuine compliments, valuing honesty and authenticity, awkward, overly sesitive, having irrational thoughts, and being dedicated in literature... she's an INFP with J trait
i'm saying this from experience and man did it hit close to home
she has that trait of wanting to make everyone happy and she's also sensitive and an overthinker. she bottles up her feelings and she put other needs first
For Natsuki, i thought of INTP. She immersed herself with readings with mostly pictures. She's passionate about her hobby and secretly seeks comfort (as we can see with Sayori). Frankly, she acts just like us the fandom. She struggles letting herself be vulnerable and has a hard time expressing her feelings. She comes off as blunt and mean but deep inside she knows that she cares a lot for her friends and her rough attitude was just a result of being with toxic friends
