Game only lists first 22 available resolutions in the options menu (usually 1280x1024, 32-bit is the highest resolution available).
dgVoodoo 2 can be used to force higher resolutions, while the resolution set in the options menu controls the aspect ratio.
Menus and in-game interface size is based on the resolution set in the options menu and is scaled properly on very high resolutions.
Instructions[1]
Download the latest version of dgVoodoo 2 and unpack it (verified working on version 2.54).
Copy all the files from the MS folder.
Paste the files into the game installation folder.
Run dgVoodooCpl.exe and in the DirectX tab set the desired resolution.
In the game options menu select a resolution that has the same aspect ratio as the one set in dgVoodoo.

Only way for me to know if you did everything correctly is if you post screenshots.
- first open dgVoodooCpl.exe and in the DirectX tab enable dgVoodoo watermark, click Apply, then make a screenshot of "general" and "directx" settings.
- open the game installation folder and make a screenshot of that, so I can see all the files there
- open the game and make a screenshot of game settings
- then start a level and make a screenshot
