As for playing with without VR setup, you be okay, I do both and don't see it having a severe impact on the experience:).

What one you using ? As of October support been put in place for Thrustmaster T-Flight HOTAS X , Logitech Saitek HOTAS X52, Logitech Saitek HOTAS X52 Pro , Saitek X-55 Rhino HOTAS , Logtitech X-56 HOTAS , Thrustmaster Warthog stick & throttle , Logitech Extreme 3D Pro Flightstick (copy and pasted from https://www.evevalkyrie.com/articles/news/hotas-support-nvidia-surround-and-amd-eyefinity-support-patch ).

I believe it's a matter of the inherent strickness of the VR enviroment right now. Back to having cables after a decade of wireless everything. A bulky (to me) headset that emits heat and disallows easy access to anything visually IRL. I can't smoke, eat or drink while VR gaming.
Basically it asks a lot of the user compared to current entertainment options. I still love it, but I have to be 'in the mood' unlike other non VR options.
I've leveled up most of my ships and enjoy using a number of them.
Once you level up past level 26 you get to play against the big dogs who are at levels up to 60. The game changes, you find certain ships work best against other ships and for different types of battle. I think that is a good cut off because at the beginning you are still figuring everything out, by about the mid-20's I started to get comfortable with everything and it was starting to get too easy, then boom in with the the seasoned players. The challenge was back and I've been having to improve my game quite a bit.
