caelum ‎oscula trees?
Am I missing somthing or do pawns not cut down the caelum ‎oscula trees?

You assign a job and they never start it?

Yeah. After a few hours of gameplay I noticed they started to cut it down with a few blocks missing. Had 3 assigned to forestry and no other trees on the map. Would be nice to have a feature like Rimworld where one can force a pawn to work a job. Maybe I am missing it.

Well, Caelum Oscula are unique in that they have a wider tree base. You'll need to clear the entire level of the tree to fell it.

You can change the priority of the job from the utility menu (U).
