It doesn't always happen, but it is a part of the "rogue like/light" genre. Each time you do die/fail you start with more advantages the next time on this difficulty level because you have a greater amount of character creation points to use on your next run.
Before long, you start making a lot deeper runs, and then you get to begin with even better stats, and so on and so forth. (Note, you'll want to select manual character creation to take advantage of this.)
I think what stats you want to optimize depends a bit on what weapon type you want to use, but IMO vitality is the least important one. and melee skill is the most important one.
Make sure you are keeping your stamina high in battle, because the higher that is combined with your fatigue, the harder it is for enemies to hit you. (And vice versa, the lower your opponent's is combined with your melee skill, the higher those percentages will climb when you attack.)
When your stamina and fatigue drop, everything drops. So I have found a fairly defensive style to start is pretty darn useful. Let your opponents get a bit tired, while you stay on defensive stance a lot unless you're going to attack, and try and attack when your opponents have swung and missed a lot.
Imagine it a bit like a real fight. It isn't always the person who comes out swinging wildly who wins a fight, but the one who is patient, has a plan, and can manipulate things to their advantage by tiring out their opponent.

Might as well ask one more. How do I better manage my stamina? I feel like I don't get back enough when I recover and my Respite barely does anything.
Gotta pump your coordination / endurance. Look for trinkets that give coordination especially
Playing on HWR only will only allow you to get a feel for the game at a snails phase, as you will run into strange roadblocks (or just die).
I suggest you get through at least chater 0(prolouge) to 3, as after that the story diverdes. When you know the introduction to the game, then you have a fighting chance to get decent points.
Regarding stats, and this is only my suggestion. You want some of them all. Sure big damage is fine, but you need to hit the target (weapon skill) to kill them, you want strength to do massive damage. And you want the rest so you can manage your health, stamina and fat.
You can continue running ahead blindly, or you can experience the game once slowly so you get a feel for it. I know what I suggest.
