You do still need to tell Grid Cartographer you want a stair though, it doesn't know. Probably worth a reminder that Grid Cartographer isn't trying to be an auto-mapper (for any game). It can track your position automatically to give a helpful frame of reference, offers a few convenience features like bulldozer mode, foot prints and these automatic secondary drawing actions, but ultimately you draw the map yourself.
What you do is draw a map of the whole game, cover it in fog (in invisible mode) and then have the avatar marker erase that fog as it moves around, creating the illusion of the map being drawn in. There was still a human involved at one stage of the process though, and via gridcartographer.com you can download a few maps for games that are configured like this (or you could do it yourself if you don't look too closely so as to avoid spoilers)
