Masenko was developed by Piccolo.
Galick Gun was developed by Vegeta(?).
That's pretty much all there is to it. And yeah, it's normal. Vegeta didn't unlearn that technique, they just didn't give SSJ Vegeta the Galick Gun, probably for balance reasons.
Masenko is generally portrayed to be much weaker but explodes on impact. In FighterZ it's pretty much just a yellow kamehameha tho when in reality it should be more like how Tien's dodon ray is in the game (and the dodon ray itself is badly represented in the game since it's supposed to be more like Frieza's death beam).
As for the beam colors, they never had anything to do with the character's aura. The Kamehameha has always been blue even in SSJ, or in Kaioken. The Galick Gun has always been purple since Vegeta's very first appearance, on top of that he uses it very frequently as a SSB in DBS and it's still purple.
Most of characters bare the signs of their Martial Arts School in their vests.
(亀) Kame - Developed by Muten Roshi, it receives the name of Turtle, because its basic training is training with huge turtle shells in their back to increase strength, stamina and speed. Master: Muten Roshi (Kame Sennin) / Disciples: Goku, Kuririn, Yamcha, Son Gohan (Goku's Grandpa) and King Ox / Techniques: Kame Hame Ha
(鶴) Tsuru - Developed by Tsuru Sennin, rival of Kame Sennin. Tsuru teaches their disciples the ability to fly, telepathy and other techniques more focused in ki special and specific blasts. Master: Tsuru Sennin / Disciples: Tienshinhan, Chaoz, Tao Pai Pai / Techniques: Dodonpa, Bukujutsu
(魔) Daimao - This is the Demon Clan martial art style, developed by Piccolo Daimao. Piccolo Jr is not a disciple, but also a master of this school, because he inherit the essence of his father. But he trained Gohan after Goku's death, and Gohan developed Masenko based in this school (Future Trunks learned this technique because he was trained by Gohan). This is a school superior to Kame or Tsuru style, because their users know how to fly and also to fire potent ki blasts. (神) Kami - This is the school of God (Kami-Sama), the good part of Piccolo Daimao. Their fundamentals are based in ki control and ki sense, but also to fly and moving with outstanding speed. Goku learned this when he reached Kami-Sama's temple, and later Kurilin, Tienshinhan, Yamcha and Chaoz were also trained by Kami to prepare for the Saiyajin invasion.

Also, all this thing about SSGSS is not canon and should not be considered. It's too much inconsistent.
We don't know but, probably? It translates to "Demon Flash" and is basically a two-handed version of the two Piccolos' "Destructive Demon Wave". The Toriyama beam overlap stricks again.
