Guilty Gear is one of the hardest depending on the character.
If you care to hear a more detailed explanation as to why DBFZ is not good to start with then I will, but to keep it short, you will learn very bad habits. The game is fun to play, but it is not a good fighting game for beginners who are serious about learning how to play fighting games in general.
UNiB is easy to pick up. But online is dead, I believe, and no Tutorials.
Guilty Gear Xrd is hard, but the game has one of the best in-game Tutorials. It teachs a lot of stuff. Actually, I would recomend Guilty Gear Xrd just because of this (including Mission Mode and Combo Challenges).
Guilty Gear Xrd/Revelator is considered to have the best tutorial but the game itself may be kind of daunting for you.
There is another game that has a tutorial that is nearly as good and basically has a free demo(only 4 characters though). The only problem is it's DOA 5 LR, haha. If you don't mind the stigma attached, it's an absolute blast to play.
Best way to get into the genre would be to play with friends "in real life", if you have the option.
There is always enough people on player match but they are mostly seasoned players. Many won't stick around too long if they notice you are a beginner. Take each game as an opportunity to grow, once they bounce then move on to the next player. Before you know it you'll be good enough that most won't bail out after the first game.
