If playing nothing but the same cookie cutter meta teams isn't for you, it may be time to move on.
First, thanks for the words of encouragement :D.
The problem is my defense is not as tight to defend the mixups that assists like kid buu, vegeta or any beam assist provide (or yamcha! XD, or cell who basically has everything). Back when I did that stuff with goku ssj It felt way more even but it seems that if you don't have access to at least one of those tools (lockdown assist) you really have to have a really amazing defense in order to be able to have time to score some confirms since the oponent's pressure will always be better.
It's likely that I end up giving up on Broly but it really sucks since I love the character and I found really cool tricks with the line up I have (even an on the ground oki from 21's ground throw), but the fact that broly can be beaten by mashing vanish or having a dp its really annoying.
Defense is universal for all characters so it shouldn't be too bad. You still have reflect, backdashing, vanish and of course blocking. Once you have thousands of games like I do, you'll get used to patterns and it'll get easier. Knowing what is punishable and safe on block help a lot as well.
Broly you gotta be good at reading IMO. You can play around with your opponent quite well. You can do command throws randomly and not just at the end of combos (like a lot of people seem to do). Instead of the expected grab you can do his charge and vanish on block if you mess up. Assist usage during unsafe moves like overheads or charging help too. Getting someone in the corner as Broly is most likely what your main objective is.
You can also barrier and charge your ki while they panic throwing beams at you then come at you flying..and that's when you hit em with a 2H
Every character has its ideal playstyle but you can find new ways to make them work.
I love to mess people up using barrier! With blockstrings though I find it a little weird. I tend to never try to throw at the end of a string (always somewhere in the middle) but it seems to me that there's a gap whenever you use H (without charge), 236S or any command throw, and if they vanish at any of those points except for H, which is not safe on block, they get a full combo due to armor.
Have you found any workaround so you can end a blockstring fully safely without using assists (ending in 236L + assists seems to throw a lot of people off and it is safe)? If not I guess you have to play defensive as hell unless you have assists and always cover the gaps.

I've already knew it. I believe that video was recorded prior to the balance patch wich seemed to slightly reduce blockstun time allowing you to fit some reflects in places where you previously couldn't (such as in kid buu's ball pressure). Unfortunally that extra time allows you to vanish vs broly's eraser blow (236S) so you don't really have any safe options on block if your opponent has meter and has done his homework.
I'll try annoying zoning strategies with him when I don't have assists. Recently I found out that using standart S and 8S can force some oponents to superdash and run straight into your charge, or if you are doing jS you can do your air grab when they super dash. I'll try to find something that works as you said. For now I went back to red square so there are more variety of people accepting my matches XD.
Black's assist its just too good once you carry people to the corner, even if I'm in the middle i can carry people into the corner.
I almost perfected a guy who was the same skill level as me, we were both yellow square and both near to SSJ3.
Sadly he rage quited just when I was doing the Broly loop combo, he denied my perfect at the end, but I laughted so hard after that. It was worth it to almost perfect a A. Gohan/Cell/Vegeta team.
I will keep Broly as my point no matter what, probably I will swap places with Hit from time to time depending on the matchups, of course this only apply in local play.
