Z had some great arcs, but it peaked with the Cell Games. Buu was the start of the downward spiral with the terrible character design of the villains and dialogue (again, made for the eight-year-olds). Some parts were okay.
If you can watch the original Japanese version of Z, you may opt to do that. They actually have some uncensored scenes (censored for English because of, you guessed it, the eight-year-old target audience).
The series could've been legendary if the target audience was young adult for Z, and adult for Super. After all, the people who watched Z are all adults now. Instead, it was "pretty good with annoying parts" for Z, and ended up being complete crap with Super.
Btw, GT is after Z and before Super, but it's not canon.
if you feel a rush
then watch DBZ kai(161 Episodes) instead of DBZ(291 Episodes)
there both the same but kai skips fillers and shorter dialogues and stare downs
then DB Super(131 Episodes)
