Plus if you think about it; The farmer could be using the crop as a green manure, which granted in my area is usually a hay type crop such as alfalfa. But either way the crop is plowed under to enrich & help loosen the soil by working some fibrous matter into it, while also adding some natural nitrogen that the plants have gathered from the air
Alfalfa is part of the legume family. This means it has the ability to fix nitrogen from the air and store it in nodules in their roots. So these cold-weather legumes will grab the nutrient from the air & store it for use during the growing season, which then is plowed down to take advantage of those nutrients.
Winter rye puts on a huge amount of growth in the spring, and establishes easily even into late November. And the best part of rye is its ability to hold fertility over the winter. Even when 2 to 4 inches high in November, it binds up many of the soluble nutrients that might otherwise disappear down to the water table. Then there is the bonus of a large crop of green manure to plow down in the spring.

You can decline a job when you first view them, & wait to see if some other will appear. They usually change daily.
I have played through a bunch of the same - & will keep playing long after all them have left.
Plus, that's assuming there will never be upgrades that include these things that people talk about, like hunting or cooking contests, fishing derbys, or the thing I would expect this game to be a perfect platform: parkour.

Prior to the mushroom contest I stopped picking, thinking that it would build up a bunch of mushrooms. But, it ended up adding mushrooms for the contest. So it appears to make sure there are mushrooms for the actual contest. And I was able to run to other nearby patches to gather a bunch. Was an easy contest to win.
I have had several Mushroom contests. I'm not sure what is wrong with your game. I once had a contest that required me to pick a total of 3, yes three mushrooms and it was done in a matter of seconds. I wasn't happy since I hope for around 20 or 30 mushrooms per contest so I can make my A la Forest recipe.
