Yeah plowing can be a bit tricky with the new tractors. Many have already requested that the Devs add some front weights to the tractors, which they have noted.

Here are some tips that may help you in your plowing:
  1. There is a 'directional' bug in the game when plowing the fields from west to EAST. This direction the tractors really want to wander about, so always avoid going this direction as much as possible.
  2. Use "Switch CVT gearbox setting" default V (4-wheel drive). This greatly helps in keeping the tractor going the direction you want it to go.
  3. Use the "Cruise Control" when working fields, it makes your tractor go at an 'even' speed, allowing some more control while working.
  4. The new plow (Lemming J17), only works with the largest new tractor. But many players still find that it is hard to control. So many recommend that you use the old plow with any of the new tractors. You only loose 1 'bottom' (plow), but you gain speed & controllability.
Note: Many of these tips also work for other farm operations.
Note 2: The newest mid-sized tractor (Linder 95) is a bit 'bouncy', so you may want to test it out before you purchase it. Most recommend you make a save before any purchases, then if doesn't work, just revert to previous save. Also, highly recommended you save often & also cycle through a couple saves for your game. This will give you more options if something happens. & also gives you more protection if your save file gets corrupted somehow.

There are many usefull tips in the forum; "A Quick Guide for New Players.."
