The sowing day and the ripening day are not considered. The formula looks like this: sowing day + ripening time + next day when the crop is ready for harvest.
The season begins on April 1 and ends on September 30. The number of seasons is not limited.
From personal experience, I sowed winter crops - wheat, barley, canola and peas. They all survived by April.
As games season have 6 months and crops take 2 months to grow, you have time to seed and harvest twice during summer, but never 3. You have plenty of time to work on fields, tho.
If you seed between early august and sep.30 end result remains same, it will be ripe apr.1.
but, (correct if wrong) i can 100% confirmed plant "wheat, barley, canola and peas" in my current game which is at mid august and when the game skips to april they will be okay and ready to harvest ...

You'll indeed have crops to harvest at apr.1, and after you've harvested its time to plow, cultivate, fertilize and sow again. After you've sewn its time to wait 2 months for crops to mature. You have enough time to do this twice during season.
As growing 2 harvests takes bit over 4 months total from your 6 month season, your 3rd seeding will always be at august earliest, there's not days left for crops to mature during same season, so it will always be winter crop and be ready at apr.1.
Since you won't gain anything from seeding early august vs. late september, your fields can have growing nothing almost 2 months of year and you still make just as much money. You have more than enough time to seed new crops after harvest.
Also you might want to store crops in silos, because prices fluctuate going up and down about 10 days cycles. Everything except agro store follow this cycle, so you'd make best to sell crops at highest point and buy tractors and fields when prices are lowest.
Crops aren't created equal in how much profit they make, but i don't want to put spoilers here, there's threads discussing best crops elsewhere.
