At the moment, he only has that single snippet of dialogue (the "help me" sample), but I could possibly expand on that in future. I agree that it would be nice to be able to chat to him a little more after you've finished helping him out, although you could always just go and watch the full Salad Fingers series on YouTube if you want to hear more from him :)
And I'll have a think about what he might want in exchange for an on-going supply of milk, although having access to infinite milk might be a little overpowered, so I'd have to make it expensive.
Regarding the hunt for the collectables, did you use/know about the Metal Detector, and its ability to highlight those items? Just curious.
And yep, the FSM altar is an upside-down colander... It started life using the same model as the actual Holy Colander item you receive, just flipped over, but I tweaked it in the end to make it a little more abstract :)
1) If you have a Metal Detector equipped, they'll glow red, and it'll make them much easier to spot from quite far away, especially at night.
2) If you go through a Stone Henge portal, there are a bunch of random effects that can occur... One of those effects will teleport you straight to a random spoon.
