you can delete Direct X completely but there is absolutely no need for doing this:

After that you install the direct x version you want to have.
But as I said before there is no need for doing this.
All Direct X versions run besides the others without any problems. Even if you have hardware that doesn't support Direct X 11 Windows won't use direct x 11.
So your question doesn't make any sense to me.
And if you question is just for how to uninstall the DX11 mod for Gothic then I believe you have completely reinstall gothic afaik
Just rename the file ddraw.dll in folder "../Gothic/System".
