Ctrl + Up to use
Ctrl + Left/Right to move items (from chest to inventory, from inventory to trading window, ...)
There are combinations to move tens and hundreds of items (ore, arrows, ...). Pretty sure Ctrl + Shift + Left/Right was one of those, don't remember the other one right now.
Action+TurnLeft(A or Left Arrow) moves items from your inventory to currently selected inventory (chest, knocked out body, trading with merchant)
Action+TurnRight(D or Right Arrow) will do the opposite of the turn left, moving the items to your inventory or to be bought from a merchant.
And the ones most people do not know:
Action+StepLeft(Bound to Q for me) or StepRight(Bound to E for me) will move stuff at stacks of ten at a time.
Walk(Shift)+StepLeft or StepRight will also move stuff in stacks of 100 while in the inventory screen.
And a couple more in for anyone who may not know:
To switch between melee and ranged weapons you must hold the Weapon(Space)+Up to switch between them, expecting you have two equipped.
Holding the Jump(Alt or RMB) will initiate an action if next to a ledge, moving the camera to the position of the ledge. Pressing Up while holding down the Jump button allows for easier climbing I have noticed.
Hope this helps anyone having trouble with controls.

Press Esc to open the Gothic mennu, go to SETTINGS - CONTROLS and reactivate the "Standard settings". This repairs the arrow keys.
Remember instead of Space bar you can also use to draw an sheathe:
1 = Sword
2 = Bow/Crossbow
Will pressing 1 or 2 put the torch away?
TAB = Open inventory
then WASD or arrowkeys to select items (depending on your control settings)
To activate an item: CTRL + W (or CTRL + arrow up)
TAB again to close the inventory
This is how you can use e.g. a torch from the inventory.
Now, to get rid of the torch, just do the same thing! Activate a second torch from the inventory!
Of course this only works if you have at least 2 torches.
Pressing 1 or 2 will also get rid of the torch, but then it will just drop to the ground, so you will lose it. With the method explained above the torch is put back into the inventory.
