Start with all the trunks first, to keep a clean palm fronds left to be used.
Or start with the palm fronds, to let the leaves and coconuts drop like normal then after that starting on the trunks.
Once one trunk is removed from any palm (except the small ones) they will bug out if you take the fronds in between. Results in one coconut hoovering in the air and the palm fronds disappearing. All other coconuts if they are left sticking inside the sand like they are still on the tree.
Latest patch fixed this for me.
