if its Destroying enemy Brigades, then it depends. You can either have the enemy Army Surrounded by your territory when they were defeated(mind, this has only happened reliably when the Union sends the Department of the West deep into Arkansas while there's still lots of fighting in Missouri)
If its in Battle, then you need to involve Melee, as after a Brigade Routs your troops will stop shooting, or at least not shoot them enough to kill. So preferably you either surround the enemy or use Cavalry to keep pace with them and be in Melee, and Most of the time I do this the enemy brigade is reduced to 300 men or destroyed in its entirety
Oh, didn't know that I can actually destroy enemy brigade like that, however I really mean BRIDGE across the river or any type of crossover :)
When I'm talking about Destroying enemy Corps, typically its when I corner them on the Banks of the Mississippi. Normally this is with the department of the West YOLOing deep into my territory which then gets flyswatted by the C.S. Regulars that was heading towards Missouri. And when I say Cornered, I mean Cornered-as in they are on a small peninsula when I come and steamroll them.
In regards if they are trapped deep into your territory, they'll retreat to the nearest town and just disband.
Even if you don't destroy them outright, should the enemy not have nearby reinforcements and you have one or two corps(even if they are small) near them, just stick to them and you'll end up giving them massive casualties while(and this is heavily dependent on where it happens, the instance I'm talking about here was in W. Virginia) they play ping-pong. Using this I whittled down an army of ~20K after they were defeated into ~6-8K when they left Virginia
