How do I remove or exclude the Chancellorsville battle map?
I am simply fed-up with fighting every single battle in Virginia and the Shenandoah Valley on the Chancellorsville map. It simply isn't fun. It's like a knife fight in a phone booth. I just do not enjoy fighting on the same map 20+ times in one campaign. I win each and every time (the AI is incapable of winning any battles) but it gets boring as I do not enjoy not being able to deploy in more open grounds.

presuming your are playing as CSA. try moving your armies to a different area like winchester or manassas or staunton. those are fun maps

If you're in an area where a major battle occurred that's the map you're always gonna get

The next set of battle maps are supposed to have a couple of generic maps that will be seen randomly to avoid this type of situation. I have no idea when we will see them but it is listed third on the post-release roadmap.
