When you see your hand extending to something, you can press your touchpad equivalent of the left mouse button to interact; this includes using the stairs to climb back down to the boat.
You'll get the hang of it as you go along, though. Just ask someone if you don't understand anything. You can get to the options menu from the main menu by pressing the little anchor icon on the bottom part of the screen. You get to the same menu by pressing esc in-game. You can review the keys that you'll need to use by selecting «view» next to «controls» in that menu. When you do get a mouse, I recommend using the wasd keys to move around instead of the arrow keys -- it will be a bit more convenient. The w, a, s, and d keys are used for movement in pretty much every modern videogame which involves controlling a character.
Once you can look around, look into the direction of the ladder to the ship, move close to it, wait for your character to extend their hand, and press your left mouse button/touchpad button to climb onto the ship.
