Enemy puts "Foreign Enemy" which likely implies a normal human that isn't part of the ship's crew.
Beast is anything not human.
"Unknown X" is just a note-taking tool, and aren't taken as answers.
They're considered a beast.

I had the same problem - I tagged the spiders as beasts but somewhere in the game the game calls some of the foes "enemies" which got me very confused. I actually had to go on the forum and look it up because I had some "speared by enemy" and it did not work.
