What exactly is the difference between the difficulties?
I've been trying to find an answer, but the forum has tons of mentions of difficulty without talking about what's actually different between them.

What changes?
Do you get more stats or XP?
Are enemies just weak or fewer? Or just get a malus to make them miss more?

Also, other than the challenge, is any content different? Any impacts on being able to hit max level or anything like that? As I know some games with an easy mode give you less encounters and enemies, which results in less chance for XP gain.

Only the challenge is affected, it's much easier to do everything in Easy mode. Enemies are easier to hit, you and your companions are harder to hit, you get more XP, more skill points for your skills, and I think that's it.

The content itself is the exact same.

Good to know. I'll likely be playing on default, but my wife might like to try the game, she's just not much of a gamer so would enjoy an easier time of it without actually missing out on anything.

We get annoyed when games cut off access to stuff for playing on easy.

Yeah, I'm against locked people out of content for not playing on higher difficulty. The point should be more challenge, not having access to more of the game.
