If you're into Exotic Super Sports Cars, you might want the Pagani DLC, since a lot of them use the V12 engines from this DLC.
Other than that, it's next to impossible, to recommend specific DLCs for workshop cars, since the needed DLCs can be all over the place. You should look at the workshop cars, that peek your interest the most and see, what DLCs they need. You can see that on the right side of the car's overview window.
Most of the stuff (actually all of it...), that needs specific DLCs can be swapped out with the editor, but since it's mostly used for a reason, other things might not fit as well or even not at all, so it'll always be a compromise.
