Which cars is particularly worth restoring?
I'm now level 34. I'm currently in the process of restoring 2 cars from the junkyard.

In general, I no longer do customer orders, instead I look at the scrap yard for completely run-down cars that are almost ready for the scrap press. I refurbish these cars like new in order to earn real money.

But I would like to get a few tips on which cars are particularly worthwhile and what is the maximum mileage? I don't care about the horsepower, the main thing is a completely run-down car that I can restore.

(Important: Please only recommend cars that I can also find in the junkyard that I only buy from the junkyard so that I can make a real profit after the restoration because that is the only thing that this whole thing is about: Profit!

I would argue some people like to role play and find doing customers cars just as rewarding as you do in restoring, just giving my opinion.

You earn significantly more from the restoration of a completely run-down vehicle than with a customer order! The worse the condition of the vehicle, the more work it does to restore the vehicle as it is, and the more work, the more money it does.

The amount of 'profit' you will make on a car depends on a few variable's. First, it's assumed that you will use the workbench and repair any parts you can and only buy 'new' when that's not possible ofc. Aside from that, the age of the car--like old 60's model's vs 2000's model's--and amount of mileage on the vehicle directly affect profit. The lower the mileage, the better the profit. On top of these two there's also the car's overall value. With an expensive car, you will gain much more profit vs. an economy car for example. For instance, if you have the Pagani DLC you will make a fortune restoring one of these. I recommend looking in guides section and get the "Allowed Places" utility so you can set all cars to show up in the junkyard. That can be done by editing config files but, that utility makes it SO much more simple.

I won't find a Pagani in the scrapyard if maybe in a barn. You mean, for example, if I restore a car with a lot of horsepower which is also good but has a few km down, then I get more money? And what do you mean by the "Allowed Places" function?
The Pagani can be found in junkyard if you alter the config files to allow it to spawn. As Mardoin points out this can be activated using Allowed Places although I'm not sure how this works nor whether it allows ALL models to spawn in the barn/junkyard. So I just edit the files to allow the most lucrative marques. (The procedure is explained in my own Guide (not a plug, honest...))
Some models make more than others, e.g. I've just renovated a Huayra from scrap and made $500,000 but the Revolucion will turn around slightly less. Mileage will also affect the profit as will the final condition of the renovation. As a little tip, if you've got a full interior but it's showing, say, 30%, just give it a valet et voila! (excuse the French, Raymond Blanc's on the telly...)
Other good returns can be made on Porsche, Merc SLS, Viper, Mustang, Bentley Continental & Stradale/Quattroporte to name just a few.

I will not edit or modify any files from the game. I leave it as it is, because of me I wait until I have a barn card because I don't have a buck there then to break something at the game!
Well, it's up to you, but there are plenty of us who have modified without breaking the game. Perhaps next time you ask for advice, state exactly what you want at the start and save us all time.

if you want money, download the bugatti chiron from the workshop which go from about 350-500k in the scrap yard. You can restore it and sell for like 700-800k. You dont even have to repair any interal parts, just weld the exterior and then clean the interior and then the resell value almost doubles.

If you want REAL money get a Mclaren F1 or Ferrari 250 GT mod, I bought one for around 12 million from a scrap yard and resold for near 110 million

I get the impression the OP doesn't want to use mods though--based on previous statements. So, they just want to know which one's for the 'vanilla' game.
It's also confusing that the OP has stopped customer orders at Level 34, i.e. one short of that required to fix body parts and hence renovate successfully....!
