There are a number of reasons why you do not see many trucks in the junkyard. One reason may be that you do not have the correct DLC, or the truck you are looking for may not be configured to appear in the junkyard. The junkyard is very random. If the junkyard is not nearly full of cars, quit the game, quit Steam.. then restart Steam then the game. There are many vehicles configured NOT to appear in the junkyard by default. You can change that in the config.txt file in your CARS folder. There are many posts here on how to do that.

You don't actually have to quit Steam. Really all you need to do is, save before going to junkyard. If you don't like what you find, exit game without saving. Then reload your game and try again. It's random so, each time you go to the junkyard, it will randomly spawn vehicles in it. It's almost never the same vehicles as a previous trip.
There is a built-in spawn chance that is different for each vehicle. So, you'll more likely find the older model cars in junkyard as opposed to newer model ones because their coded "chance" of spawning is lower. I suggest doing a search in this forum for; "Allowed Places" utility. It's a mod that makes adjusting your car config files super easy and you can set which vehicles you want to have show up in junkyard or anywhere else.
Keep in mind, some of the newest model or high value vehicles are set to not even spawn in the junkyard at all....some are even limited to only show up in "Salon." So, that mod can fix this for you.

i have the dlc for the trucks. it is rare to find a truck in the auction and even salon. i do come across old model trucks at the junk yard every now and then.

It's supposed to be this way, since it's how it would be in real life. Finding a (mostly) intact Ford GT20 or one of their famous pickup trucks at a junkyard, ready to restore to (mostly) mint condition? Yeah, not likely an everyday thing. Honda Civics? Hundreds of 'em, and I'm surprised they haven't gotten the DLC for those already.

I mention the GT20, because I just found one at a junkyard last night, almost completely stripped down to the bare frame, except for a totally-drained battery, the rear bumper and a few small parts of the engine. I'm going to have fun with that one, but the others I've found lately have just been the same ol' same ol'.

Oh, I did find a Roadrunner, which I had never heard of before playing this game. Kind of a meh car, but it was fun for a quick-and-easy rebuild. Didn't sell for much, but the pair of Porsches I sold a few days ago for half a million total more than made up for that.

They can be found, but RNG in this game is a stingy child with a bag of caramels that it simply WILL NOT share.
