On top of that, is there a reason why some of the customisation items have a small star next to them? I couldn't find the information in the game.
Guess I'll be skipping this sequel.
Depend on the prison actually but it's not as random as you think.the 2nd Prison (a train), that prison will have all the escape stuff you will need the randominess is it location but the Desk are always at the same spot. Also some escape Method are Multiplayer only and those are pretty straight foward. And some Escape are Single player only, the payphone in the pretty much tell how you can escape.
No you just knock them out (i'm not sure if you can tie them up)
Also note there's some difference in crafting recipes available depending on which map you're on.
A shame. I was really hoping they would fix this problem in the sequel.
I can't speak for the other maps since I have only played the first one so far, but the first one has a method to escape within just a few minutes requiring (almost) no loot luck. Some other methods of course require you to get a constant supply of good items like shoveling your way to the exit.
But generally you are correct, the core gameplay hasn't changed much.
