Most escapes can be done as multiplayer however some (such as a the civilian escape in the first prison) can only be done as Single-player. There are still plenty of ways to escape the first prison though.
Spoiler: (6 ways to escape in multiplayer)
There are 2 places where you can Cut out safely. Look where the patrols don't go.
There are (at least) 2 places where you can Dig out.
There's 1 place where you can safely Crowbar / Pickaxe to get out.
There's the unique multiplayer (Postal) escape. The hardest part is finding the adress.
That's just out of the top of my head.
If you include the civilian (Singleplayer) escape that's 7 ways to escape the first prison.
That's only for some singleplayer only (unique) escapes. Every prison has at least 1 for both singleplayer and multiplayer. That doesn't mean there aren't more ways to escape...
The first prison is laughable easy and is basically a 2nd tutorial. imo
