The idea behind UNIFORMS (uni=single; form is self-explanatory) like guard uniforms and prisoner clothes is to make sure everyone knows someone is a guard or prisoner. It doesn't make sense to have multiple different prisoner outfits in the same prison.

As far as known, the game has Versus and Co-Op.
Versus being "Who can break out quicker" and Co-Op being "Lets break out together".
Of course in Versus you can screw with eachother's plans.
The head and hair are highly customizable in model and colour, clothes, no. You can wear guard uniform and medical uniform, but the guards don't tend to like that.
