Hi there!
The short answer is Yes. You can use a flight stick to play the sim. We have successfully used them, however the game is best suited for a Transmitter as that is how FPV racing drones are flown in real life. If you don't have a Transmitter, using a gaming controller can work as well. Just keep in mind that gaming controllers don't have the same amount of resolution as a transmitter, so the sticks are not as detailed responsive as a TX. Also the Throttle stick on a Game controller is spring loaded to stay in the center, as TX's are not, so there is some difference.
I will say that when we tested with flight sticks, we used Dual Flight sticks, but found that it wasn't the most efficient way of flying.
