I just double checked my Taranis settings. Everything looks good and setup as per the video. Unfortunatly the reset and restart switches still doesn't work. I should also mention that the switches work in DRL Beta.
I'm using a Spektrum DX7 (DSM2). I don't see any place in my menus to assign a switch to a channel. Here are a couple videos showing my problem. First is a short video showing the switches moving as I move the right stick for roll.

second shows setting up a NEW contgroller and not touchiung a single switch or stick. I only hit next when available. The setup program was receiving input from something. I tried 3 different USB ports including USB 2.0 and USB 3.0 both front and back ports. This is using the USB adapter that was purchaed from Amazon based on the link provided by DRL

If you have a new model created in the Taranis and have assigned channels to the switches in the profile on that radio, then it should work when you setup a new controller in the game. As long as the switches are setup exactly how that video shows, then the game will detect them. Were not finding any issues with the game when it comes to setting up the Taranis radio. The only thing I would suggest would be to try again, at this point I dont have any other solution for you. I'm sorry. :(

You need to use the video that talks about setting up your "Spektrum" radio. Not the Taranis video. Here is a link below to the spektrum radio. It is the same concept. Keep in mind that this is not for the exact DX7, nor have confirmed that specific controller..
Once the controller is setup properly then the game will detect the open channel to allow the switches to work. Also keep in mind the USB dongles for Spektrum are very touch and go. Some work and others do not for some reason. Since the Spektrum radio uses an Audio jack to send its information, we have noticed that it is not the smoothest. We have found that USB dongles that have a multi switch on the side of them work better than those that do not. Also you can try using the program SmartProPoPlus and just go straight audio to audio to see if that works. Sorry for the inconvienece. Hope you are able to get it working.

Unfortunately those videos won't work for the DX7 as the menus are completely different. I think the problem lies in the USB adapater. When I setup SmartProPro plus everything worked fine (switches were in differnt locations but once you know which one is chan 5 and chan 6 it's all good)
One other thing, KaDoodle how come you have 244 props in the beta when us non devs only get 20? :)

If you're still having issues after having followed the steps in the links that @KaNoodle has posted, please be patient. There is an update incoming that should address the challenges you've encountered.
