But when a mob dies it's gone forever.
New mobs will spawn but never the same mob.

I'm afraid there's no way Reuben can ever come back.

Especially since in Minecraft: Story Mode, not only do humans from Jesse's world not respawn (aside from in the Games world, due to the respawn zones), the Youtuber characters, whom live in a world with things being like it's a game a lot more (or at least, I get such implication due to referencing YouTube videos with mention of tutorials, combined with how everyone (even the ones who aren't based on real people) has Youtuber-esque names).

I agree fully if he comes back it will be happy but if he doesent then well he doesent just injoy it as it is man

Reuben's death was put in place to make sure that the player and the characters realise that they aren't invincible. This is the main reason why Reuben's death is unavoidable.

Honestly, Reuben being revived would then just ruin his death scene and all of the times Reuben is mentioned post-death for me and take away all emotion from them, since I know he's just coming back later.
