Any hostesses that are unhappy should be put on a break for one session then their condition will return to "happy".
Hostesses will become unhappy if they are frequently used, if their icon is neutral or unhappy their performance will be bad resulting in more customer complaints.
I'd also recommend getting the two gold hostesses: Miss Iosbe and Estuko from substory 65 and 68. These two were really useful from start to finish for my playthrough.
If you have any platinum hostesses, make sure to do all their training sessions and apply makeovers to increase their stats.
But dancing minigames? That's a hard no, because if you mess up in those, you lose may precious seconds to adjust, so one mistake, ruins everything
